Cocoa Cranberry Oatmeal

I’ve been making an effort to eat healthier and trying to eliminate the more processed foods from my diet. I’m not a big breakfast eater. When I do I’ll either grab some walnuts & chocolate chips or a bowl of cold cereal. Sometimes I’ll have a granola bar if we have one around. The walnuts are the only thing that sticks with me for any amount of time though. I’ve never been a big oatmeal eater but inspired by some healthy living blogs and websites I visit, I thought I’d give it another try. I came up with this recipe this morning and it was actually very tasty. The cocoa gives it a nice depth of flavor and the dried cranberries add a touch of sweetness.

Cocoa Cranberry Oatmeal

1/2 cup oats
3/4 cup vanilla almond milk
1 T. cocoa powder
dried cranberries

Mix oats, almond milk and cocoa powder. Microwave or cook on stove top until desired consistency and heated through. Add in desired amount of dried cranberries.

I used quick cooking oats this morning because it’s what I had on had. It was very good and creamy but I’d prefer the chewiness of regular oats. In addition to the flavor, the cocoa also adds 1 gram of fiber to this as well as being a good source of antioxidants.
