Crock Pot Italian Roast Beef

So if you are a regular reader of my blog, you know that my cooking skills are somewhat…ahem, limited. When I do find a simple recipe that tastes great I stick with it. Years ago I was looking for something simple but yummy to serve at a birthday party for Sister. I came across this recipe for Italian Roast Beef. I knew my family would love it so that’s what I made. It’s been my go to recipe for family gatherings since.  I made it again this past Friday night for dinner and knew there would be plenty of leftovers all weekend if anyone wanted any while they were here for Baby Girl’s birthday. If you want a simple, flavorful crowd-pleaser this recipe is for you!

Crock Pot Italian Roast Beef
3-5 lbs. chuck roast
2 c. water
juice from jar of mild banana peppers
1 t. salt
1 t. black pepper
1 t. oregano
1 t. basil
1/2 t. garlic powder
1 pkg. dry Italian salad dressing mix
reserved banana peppers

Trim excess fat from roast. Place in crock pot. Mix water, juice from peppers and salt, pepper, oregano, basil, garlic powder and Italian salad dressing mix together and pour over roast. Cover and cook on low for 8-10 hours. Shred meat. Serve on hoagie rolls with banana peppers. Enjoy!
