Black Bean Soup

Today I’m sharing one of my favorite pantry meals. This is a quick and easy meal perfect for busy nights. And it’s made from inexpensive items you can keep in the pantry and have on hand all the time.

Ingredients:
1 can black beans (rinsed and drained)
1 can corn (drained)
1 can diced tomatoes with chiles
24-32 oz. chicken broth(depending on how soupy you want this)

Place all ingredients in large pot(my 3 qt. size works well), bring to a simmer and heat through.

That’s it! You’re done and dinner’s on the table.

Alternative recipe: Black Bean Burritos
Use same ingredients as above but omit the chicken broth. Heat through in a skillet and serve in warm tortillas with salsa and sour cream.
