Caramel Brownie Bites

A couple of weeks before Valentine’s Day, The Man mentioned that it was about time we had Caramel Brownie Bites again. I filed that little tidbit of info away knowing they’d make a good addition to the Valentine’s Day treats I’d be making.


This recipe was shared  with me by a friend of mine years ago and has been a long standing favorite in our house. We don’t have them often but they are a delicious treat to have from time to time. They’re also a great little dessert to take to a party, potluck dinner, etc.

You will need:
1 box brownie mix
eggs and oil required by mix
caramel kisses, remove wrappers
chocolate chips for melting
mini muffin pan

Mix batter according to package directions.

Spoon batter into mini muffin pan that has been sprayed with cooking spray.

Cook according to package directions. (Typically 325-350 degree oven for 15 minutes.)

Remove from oven and immediately push caramel kisses point side down into brownies.

Let cool a few minutes and then remove them from the pan and place them on a wire rack to finish cooling.

Melt chocolate chips in microwave. 1 minute at 50% power and then 30 seconds at 50% power until melted, stirring in between.

Drizzle chocolate over brownie bites. Enjoy!
