Freezer Friendly Food: Spicy Chicken Strips

I love the convenience of precooked frozen chicken strips but am not a fan of all the extra ingredients. While doing my once a month cooking this weekend I decided to try making my own precooked chicken strips. I was very pleased with the results and will be making these often from now on. These are great to have on hand for quick lunches and dinners.

Spicy Chicken Strips

You’ll need:
1 1/2 to 2 lbs. boneless, skinless chicken breasts
4 T. canola oil
1 1/2. T. chili powder
2 T. cumin
1 T. garlic powder
1 tsp. salt

Mix oil, chili powder, cumin, garlic powder and salt together in gallon size zip top bag. Add chicken, zip closed and message spices and oil into chicken. Place in refrigerator to marinate for at least 15 minutes.

While chicken is in marinade, preheat oven to 400 degrees. Remove bag from refrigerator and pound chicken thin(ish) while still in bag.  Place chicken in 13×9 baking dish coated in cooking spray.Bake at 400 degree for 20-25 minutes, until 165 degrees internal temperature is reached.

These chicken strips can be heated in the microwave or a skillet. Just heat desired amount and use in wraps, pitas, sandwiches, fajitas, quesadillas , atop salads, etc.
