New Orleans Chicken Salad

My family and I love the food and flavors of New Orleans. And while I’ve never actually eaten chicken salad there, those flavors were my inspiration when I wanted some chicken salad recently with a little extra kick. I came up with this recipe for New Orleans Chicken Salad. I hope you enjoy it as much as we do. 
You’ll need:
2 lbs. boneless, skinless chicken breasts
Cajun seasoning
1/2 medium onion, diced
1/2 bell pepper, diced
1 stalk celery, diced
2 T. Zatarain’s Creole Mustard
3 T. mayonnaise, heaping
cooking spray
Preheat oven to 350 degrees. 
Coat 9×13 inch baking dish with cooking spray.
Place chicken in baking dish and sprinkle generously with Cajun seasoning.
Bake for approx. 20-30 minutes, until internal temperature of 165 degrees is reached.
Allow chicken to cool. Pull apart into bite size pieces. 
Mix chicken, onion, bell pepper, celery, Creole mustard and mayonnaise together until chicken is well coated.
Enjoy alone or on French bread with lettuce and tomato.
