Homemade Bubble Crust Pizza

A couple of weeks ago while The Man was out of town, I made pull apart pizza for the girls and I. I’d seen the recipe on blogs and Pinterest, like this one at Plain Chicken,  and it looked fun and easy, perfect for one of those “mom’s not sleeping well and daddy’s out of town” nights.
The recipe called for canned biscuits for the crust which I used that night. However, in my ongoing effort to cut back on processed foods and cook more from scratch, I knew I’d have to come up with an alternative crust if we were going to continue to enjoy this treat.
To get the proper puffiness I wanted for the dough, I decided to just alter my favorite dinner roll recipe a little to make it work for the crust. It turned out exactly as I had hoped.
My whole family loved this.

Homemade Bubble Crust Pizza
The Crust:
1 c. water
2 T. butter
1 egg
1 tsp. salt
2 1/2 c. all purpose flour
3/4 c. whole wheat flour
3 tsp. bread machine yeast
Toppings:
Approximately 12 oz. marinara sauce
8 oz. shredded mozzarella cheese
Any other toppings you desire
Place ingredients into bread machine pan in order given or according to manufacturer’s suggestion. Select dough setting and allow machine to process dough.
When finished, remove dough from pan and allow it to rest for 10 minutes.
Spray a 9×13 inch baking pan with cooking spray.
Pinch or cut small pieces of dough off and shape it into a 1 inch balls.

Place dough balls side beside each other in baking pan.

Cover with a towel and allow dough to rise for 30 minutes. Preheat oven to 400 degrees while dough is rising.

Spoon sauce over dough.

Top with cheese and any other desired toppings.

Bake at 400 degrees for approximately 20 minutes until cheese is melted and starting to brown a bit.
