Happy Monday! How was your weekend? Ours was relaxing and fun! My husband worked a lot of long hours this summer which meant we didn’t get to do a lot of fun stuff as a family. He’s finally through that work crunch and was able to get this weekend off. We headed half an hour down the road to Pensacola Beach and had ourselves a great time.
We swam in the pool, played in the Gulf, ate yummy food and even managed to catch a sunrise. We enjoyed it so much we’re talking about making a September beach getaway an annual event.
Last night for dinner we decided to experiment a little and made Alligator & Crawfish Jambalaya. My husband read up on how to cook alligator and it turned out great. It was nice and tender, not chewy or tough at all. It was definitely a change from our normal Chicken & Sausage Jambalaya.
Have you ever tried alligator?
The rest of our meals won’t be quite so adventurous. Here’s what’s on the menu.
Breakfast: banana bars, cereal, eggs, toast & bacon, fresh fruit, Chocolate Butterhorns
Alligator & Crawfish Jambalaya
Leftovers/sandwiches (Open House at School)
Breakfast for dinner
Grilled Chicken Salad
Baby Girl’s Birthday Party – Pizza, cake, ice cream, fruit kabobs, pretzel sticks
A few weeks ago I had Chicago Style Deep Dish Pizza on the menu. While it was good, I think we all felt it was too much crust. Apparently we’re a thin(ner) crust family.
What kind of crust do you prefer?
