Good Monday morning and welcome to October! I can just smell the pumpkin pie in the air. We enjoyed a wonderful and relaxing visit with my parents this weekend. We didn’t try to run around and go everywhere. We mostly just stayed at our house enjoyed spending time together.
We did go out for awhile on Saturday. We’ve been stalking consignment and thrift stores for a sofa to replace our old, worn out one for a few months now. I spotted one I liked at a local consignment/antique/craft store one day last week and wanted my husband to check it out. He liked it but neither of us was 100% sure it was the right one. We went to look around some more and my Dad told us he’d seen a couple more in the back of the store. We went to check them out and one of them was perfect. The color matched our other furniture, it was in really good shape, the price was right and we actually like the style of it. So we bought it and it was delivered to our house within an hour. I think I like it more with every passing day.
My parents arrived on Friday afternoon and I made crock pot pulled pork for dinner that night. Saturday night we ate seafood since we always try to treat them to fresh seafood when they’re visiting. Yesterday we enjoyed yummy leftovers from the weekend.
My dad brought us fresh tomatoes and peas as well as frozen peas and corn to add to our freezer all from his garden. I’m looking forward to adding them to our menu this week.
Here’s what we’ll be eating the rest of the week.
Breakfast: Apple Bread(My mom bought this at Priester’s Pecans on the way here. It’s yummy!), eggs & toast, cereal, fresh fruit, nuts
Chicken Fajita Casserole ($5 Dinner Mom One-Dish Dinners Cookbook-bumped from last week)
Paninis, raw veggies
Smothered Italian Pork Chops ($5 Dinner Mom One-Dish Dinners Cookbook)
Macaroni Pie, peas, sliced tomato, creamed corn and cornbread
