Weekly Menu Plan 8/11/14

Happy Monday!  I hope you had a great weekend. We did some back-to-school shopping on Friday, chilled on Saturday, then had a busy Sunday which included a skating party for the new kids moving up to the student department at church. This includes my Baby Girl. Yesterday was her last Sunday in our church’s children’s ministry. I might be feeling a little sad about that. She, however, is excited about moving up.

This is our last week of summer break. We have no big plans but I’m hoping to squeeze one more fun summer outing in before next Monday.

Last week I mentioned that my husband had brought home a bunch of apples. I used part of them to make applesauce and I also made this Apple Skillet Breakfast Cake. I made the homemade baking mix up the night before so it was easy to put together one morning and it was really good. Definitely a recipe to keep in mind.

Here’s what we’ll be eating this week.

Breakfast: muffins, peanut butter toast, oatmeal, eggs & toast


Italian Pasta Bake, salad

Chicken Fajitas with homemade tortillas

Beefy Spanish Rice, salad

Roast Chicken with carrots & potatoes, creamed corn

Steamed Shrimp, potato salad

stewed tomatoes

  2. It’s hard to believe it’s back to school time already! The schools here go back tomorrow. It’s crazy. Mmmm, that apple cake sounds yummy. Love apple season and the smell of large amounts of applesauce cooking up. Almost time again.

  3. I have one more year with my youngest still in the children’s dept at church. Having her move up next year will be another big “growing” step for both of us!!
