Peanut Butter Chocolate Chip Snack Bars

We love granola bars and snack bars around here. What I don’t love is the expense and the unnecessary ingredients in many of the store bought ones. This week I decided to make my own using what we had on hand. I had picked up some Rice Chex cereal on a buy one get one sale at Publix and they seemed like a good base for these bars.

These are frugal, easy to make, and 100% approved by everyone in this household. You can certainly mix and match ingredients to suit your own tastes.

Since the binders in these are honey and peanut butter, you’ll want to  keep these chilled in the refrigerator until you are ready to eat them. If going in a lunch box, just make sure an ice pack is included.

Peanut Butter Chocolate Chip Snack Bars

Ingredients

  • 2 c. Rice Chex cereal
  • 1 c. rolled oats
  • 1/2 c. honey
  • 1/4 c. peanut butter
  • mini chocolate chips

Directions

  • Line 8×8 baking pan with parchment paper or plastic wrap.
  • Add Rice Chex and rolled oats to a medium to large bowl.
  • Melt honey and peanut butter together in a small pan over medium high heat and stir until smooth.
  • Pour honey/peanut butter mixture over cereal and oats.
  • Mix to coat well.
  • Press into lined 8×8 pan.
  • Sprinkle mini chocolate chips over the top and lightly press into the cereal mixture.
  • Place in refrigerator and chill for at least 1 to 2 hours.
  • Lift up on pan liner to remove and cut into bars.
  • Place in storage container and keep in refrigerator.
