Dark Chocolate Chip Mini Cheesecakes

I love easy and delicious desserts. These Dark Chocolate Chip Mini Cheesecakes fit the bill on both accounts. The come together very quickly. You just have to be patient enough to let them chill before you eat them.

These are great to make ahead of time when you’re expecting company or as a fun surprise for your family.

The dark chocolate goes wonderfully with the sweet and creamy cheesecake.
Dark Chocolate Chip Mini Cheesecakes Tall

Ingredients

  • 2 (8 oz.) packages cream cheese (softened)
  • 1/2 cup sugar
  • 1/2 tsp. vanilla
  • 2 eggs
  • 12 vanilla wafers or chocolate cookies
  • 3/4 c. dark chocolate chips
  • 12 baking cups

Directions

  • Preheat oven to 350 degrees.
  • Beat cream cheese, sugar and vanilla with electric mixer until well blended.
  • Add eggs; beat just until blended.
  • Fold in dark chocolate chips.
  • Place cookie on bottom of each 12 paper-lined muffin cups.
  • Spoon cream cheese mixture evenly over wafers.
  • Bake 20 minutes or until centers are almost set. Cool.
  • Refrigerate at least 2 hours.
  • Top with a few chocolate chips.
  • Store in refrigerator.
