Happy Monday, y’all! I hope you had a great weekend. After two weeks of major decluttering, we had a yard sale this weekend. We got rid of a lot of the stuff and the rest will be donated later this week when a thrift store charity truck comes through our neighborhood. Talk about convenient.
I have cut back on the amount of sugar and starchy carbs I eat over the last month and have noticed an improvement in the way I feel. However, I was really wanting pizza so I decided to give a new recipe a try. Sourdough bread is supposed to be easier for your body to digest but I’ve failed multiple times to create a sourdough starter from scratch. So, I gave the Easy Bread Recipe from Gwen’s Nest a go.
It was really easy to mix up and I just let it hang out in my fridge for several days until I was ready to use it. It made a nice, thick crust. And while it’s not like regular pizza dough or traditional sourdough, it’s still good. It was also really easy to work with.
Here’s a peek at the dough about an hour after I mixed it up and at the resulting pizza.
I still want to learn to create a real sourdough starter, however, I love the ease of this dough and can see myself using it for pizza dough and bread sticks to go along with dinner from time to time.
Here’s what is on our menu this week.
- Oatmeal with fruit
- Pancakes (I’ll try these Low Carb Pancakes), eggs, sausage
- Banana Bread Baked Oatmeal (never made this last week)
- Dinner Out – Missions Fundraiser
- Grilled Turkey Burgers, side (Big Mac Salad for me. I seriously love this.)
- Baked Chicken Tenders, broccoli, salad, beans or corn
