Do you like beans? I was not a fan when I was a kid. My parents would serve beans for dinner and I’d cover them in ketchup so I could eat them.
As an adult though, I gave black beans a try and loved them. And while I’ve tried and appreciate other kinds of beans since then, black beans are still my favorite.
They are easy to prepare and very inexpensive which makes this Black Bean Soup a great healthy dinner choice. The fact that you make it in the crock pot makes it an even better choice.

This is a great recipe as is but I almost always end up tweaking a recipe a bit. First of all, I soaked my beans overnight before cooking to break down the phytic acid. I also added some salt to the recipe because beans always need some salt in my opinion.
Finally, I did not blend them. I did let them cook long enough to get nice and soft but I prefer my bean soup to have a bit of texture so I opted to not blend.
Topped with some avocado, this made a delicious real food dinner.
