I don’t know about you but I love crock pot cooking. Some days it’s just not possible to get a healthy dinner on the table without it.
When you run across a crock pot recipe with just three ingredients that is packed with flavor like this Balsamic Chicken, you keep it close at hand.

This has a yummy, bold flavor. I suggest adding a little salt to taste. I found it tamed the tang of the balsamic vinegar some as well as make the dish more savory overall.
I tried it over rice and in a low carb wrap and preferred it as a wrap filling.
This makes a great real food meal served with rice and veggies or serve it in a low carb wrap for a THM(E) or energizing meal.
I believe this falls into the Paleo category as well as long as you watch your salsa ingredients and make sure you eat veggie sides.
