It is entirely possible that you will question if I understand what it means to eat a healthy dinner with this post. If you are not familiar with the Trim Healthy Mama plan, a meal loaded with sour cream, cream cheese, and beef really doesn’t seem to fit the healthy category.
However, the beauty of THM is that it focuses on fuel separation. If fat is your fuel source in a meal, you limit the carbs. If carbs are your fuel source in a meal, you limit the fat. Because of that, you can enjoy meals that seem rather indulgent, like these Sour Cream Enchiladas, without the negative health impact.

You know I adapted the recipe a bit because that is what I do. Instead of topping the enchiladas with the onions before baking, I cooked them with the beef while browning. I also only added about 1/10th of the jalapeno. I don’t like too much spice and felt the whole jalapeno would be overwhelming.
This is a THM(S) or satisfying meal which means it’s higher in fat with limited carbs. You definitely need to use low carb tortillas for this recipe. If you’re not comfortable with the store bought kind, you could make your own low carb tortillas. By making your own tortillas, this meal would also fall into the real food category.
