Skillet meals are a favorite way of mine to get dinner on the table easily on busy nights. This Southwest Chicken Skillet is particularly handy for a busy night because it uses precooked (leftover) chicken and just a handful of simple ingredients.
It doesn’t hurt that it is also a hearty, comfort food type meal either.
I didn’t have any green onions on hand when I made this so I just used some chopped green bell pepper on top.
This is a great real food meal. It could also be a THM(E) or energizing meal as long as you use chicken cooked in minimal or no oil and leave the cheese off or use no more that a light garnish of low fat cheese.
