I love skillet meals. They are an easy way to cook up a healthy dinner and simplify clean up.
This Tex Mex skillet is super easy and full of flavor. Aside from cooking the rice, it comes together quickly.

It doesn’t say in the recipe, but you should add the cooked rice in when you add the lime juice, taco seasoning, and water.
This is a THM(E) or energizing meal. Enjoy it with some roasted or steamed veggies. Just make sure to limit the fat.
This is also a wonderful real food meal.
