I remember my mom making stuffed peppers when I was a kid. And while I was a picky eater, I actually did like stuffed peppers. Well, I’d eat the stuffing and ignore the pepper but still…I ate it.
For some reason, this is one of those meals I haven’t really made as an adult. However, I ran across this recipe for Turkey Stuffed Peppers while looking for healthy dinner ideas and decided to give it a try.
It is really yummy and I even ate the pepper. I’ve come a long way. Did you grow up eating stuffed peppers?

My store was out of red peppers so I used a mix of orange, yellow, and green peppers instead. This makes a filling and delicious real food meal.
You can enjoy this as a THM(E) meal if you use 96%-99% lean ground turkey or rinse your ground turkey after you brown it. Be sure to go light on the cheese as well.
