Hello, friends! I enjoyed a restful fall break with my girls last week but we’re back to our regular routine this week.
I hope my U.S. friends had a wonderful Thanksgiving. My parents were in town the weekend before and we enjoyed a mostly traditional Thanksgiving dinner with them. We had smoked chicken instead of turkey but we also enjoyed family favorites like chicken and dressing, macaroni pie, and pecan pie.
It was just the four of us on Thanksgiving day, so we opted for a less traditional homemade Chicken Alfredo with Fettuccine. I used The Pioneer Woman’s Fettuccine Alfredo recipe and it did not disappoint. Sister and I made a pumpkin pie for dessert since we love it. We substituted heavy cream for the evaporated milk and used coconut sugar instead of regular sugar. It was so rich and delicious! Baby Girl made brownies for herself and my husband since they don’t like pumpkin pie. We watched the parade, enjoyed our meal, took a walk together, and watched a movie that night. It was a lovely, peaceful, thankful day.
We are all ready to get back to less heavy and healthier meals this week. Here’s what’s on our menu.
