Happy Monday, friends! It’s menu planning time again.
Life is returning to normal. Christmas break has come to an end and the girls went back to school today. I certainly enjoyed the down time and am feeling well rested for the first time in awhile.
We had planned to spend time with my family this past weekend but had to cancel due to snow and ice in Alabama. So, we’ll have to find another time to make that happen which means we get to stretch out the Christmas celebration a little longer.
Since our Christmas break was rather low key we did a good job of eating home cooked meals and focusing on healthy dinners.
We will be celebrating my husband’s birthday on Sunday. The birthday menu isn’t finalized yet but he did mention the possibility of Red Beans and Rice for dinner.

- Overnight Oats
- Eggs and bacon
- Cheeseburger Soup, Low Carb Biscuits
- Fajita Bowls
- Garlic Chicken, Rice, Veggies
- Homemade Pizza
- Leftovers/Take Out
- Birthday Dinner
